A Workshop at Sambhaavnaa, May 18-22, 2016

In this workshop, we will consider what it might mean for each one of us to eat responsibly, and share strategies and tools for doing so. As human beings, we have in common that we all eat. Yet, in today’s world, most of us think of eating only in terms of consumption of food, rather than as a way of participating in a web of relationships. Food sustains the human body, it can be a source pleasure, and often a way to express nurture and community, but it also connects us to complex webs of ecology, culture, history, and politics. This workshop will thus provide an opportunity to think about, as well as experience, food in ways which we may not usually do. We will address questions such as how has the food we eat been produced, where, by whom, when? How do we choose what to eat? How do we assess the value and quality of food? What are the implications for the health of our bodies, and for the well-being of communities and mother earth?

In the context of globalization and market liberalization, with the expansion of corporate agriculture, processing and retailing of foods that come to us from ever-growing distances, in increasingly processed and packaged forms, the answers to these questions are often unclear. In the workshop, we will use the lens of ‘food chains’ to trace some of the complex relationships that constitute food in the contemporary world and in our lives. We thus aim to gain a basic understanding of industrial food chains, by looking at corporate-dominated agriculture and food processing industries, fossil-fuel fed farming, toxic ‘food’ additives, ecological degradation and lifestyle diseases. How do industrial food chains work? Who benefits and who loses? How does it affect us?

We will also explore the differences between industrial food chains and alternative, more sustainable food chains. What are the differences between chemical and organic foods? Packaged and fresh foods? How can we be a part of healthier, more localized food chains? Can we come to feel gratitude for the creativity and energy of those that help us grow food (farmers, mother earth etc.)? How can we support small-scale food production and fair economic returns for farmers? How might we begin to grow our own food? Are there localization strategies we can participate in? How can we ensure that our ‘waste’ goes back to nourish the soil?

One way that all of us can eat more responsibly and contribute to alternative food chains is by cooking nourishing and wholesome foods for our selves, our children, and communities. Sourcing, preparing and cooking food will therefore be a central activity of the workshop. Different methods of cooking (e.g. raw, steamed, fermented, baked, boiled, stir fried, fried etc.) will be explained and used, as well as use of different mediums (gas, solar, wood fire etc.). We will learn about millets: how they were used in the past, current conditions of these ‘coarse grains’ in India, how we can use them in our daily lives, and what the benefits are. We can go over home-made and healthy snacks and children’s treats; alternatives to packaged foods like biscuits and bread, as well as refined foods such as sugar, maida, white rice, refined oil etc. But we will also reflect on how cooking is not only about healthy ways of processing food to sustain the body: it is also about the attitude of the cook while making food, and the social process of preparing, eating and enjoying food happily together with others.

Other than cooking (and eating!) delicious and healthy food, activities at the workshop will include presentations, discussions, personal reflection, short readings, films, field research, recipe-sharing and other learning-exchanges, gardening, composting…

This workshop is appropriate for anyone who eats food, and is interested in exploring how we can eat more responsibly.

Facilitators:

Sumi Chandresh and her partner Chandresh (Manavji) have two children, Qudrat and Ajanmya, who are unschoolers. Sumi is a creative person who believes in learning new things, likes to be with kids, and making things out of waste. She is interested in organic farming, and enjoys experimenting. Sumi loves cooking, that is her passion. She has been exploring and learning for the last 20 years, and loves to live life joyously.

Karuna Morarji lives with her husband, Vinish Gupta, and their son Naman, in a village in north-west Karnataka. She enjoys rural living, experimenting with healthy cooking and food preparation, organic gardening, low-impact lifestyle, and learning alongside Naman, who is also a happy unschooler. Karuna has conducted a similar workshop on food in the past, and found it an engaging way to bring together and share her interests in alternative education, critical social theory and food.

Apart from Sumi and Karuna, there will be a few other facilitators for specific sessions.

Language: The workshop will be conducted bi-lingually (Hindi/English); proficiency in both languages is required of participants.

Cost: Rs. 4000 for 5 days, inclusive of boarding, lodging, and all the materials used in the workshop. There will be a few need-based scholarships available.

आहार विचार व संस्कार

सञ्चालन – सुमी चन्द्रेश और करुणा मोरारजी

भोजन करने वालोँ को समझना होगा कि भोजन करना धरती में गढ़ा हुआ है, कि वह एक कृषियुक्त क्रिया है और हम भोजन कैसे करते हैं इस पर ही काफी हद तक यह आधारित है कि धरती का उपयोग किस तरह होता है। यह एक सरल तरीका है एक बहुत ही जटिल सम्बन्ध को दर्शाने का। ज़िम्मेदारी पूर्वक भोजन करने का अर्थ है, यथासंभव इस जटिल सम्बन्ध को समझना व व्यक्त करना।

इस कार्यशाला में हम जांचेंगे कि हम में से प्रत्येक व्यक्ति के लिए ज़िम्मेदारी पूर्वक भोजन करने का अर्थ क्या है, और इसके लिए क्या तौर-तरीके हो सकते हैं। मनुष्य होने के नाते हम भोजन तो करते ही हैं। लेकिन आज की दुनिया मे हम में से अधिकतर लोग भोजन करने को एक उपभोग की क्रिया के रूप में देखते हैं न कि विभिन्न अंतरसंबंधोँ के ताने बाने में एक भागीदारी के रूप में। भोजन मनुष्य का आहार है ही, एक रति का स्रोत भी, पोषण व मैत्री व्यक्त करने का ज़रिया भी। परन्तु वह हमें प्रकृति, संस्कृति, इतिहास व राजनीति के जटिल ताने बाने से भी जोड़ता है। इस कार्यशाला मे हमें भोजन के बारे मे उन तरीकोँ के मार्फ़त चिंतन व अनुभव करने का अवसर मिलेगा जिनसे हम प्रायः नहीँ करते हैं। हम जो आहार गृहण करते हैं उसका उत्पादन कैसे होता है, कहाँ, किसके द्वारा और कब – इस तरह के प्रश्नोँ से हम जूझेंगे। हम आहार का चयन कैसे करें ? हम आहार के मूल्य व गुणवत्ता को कैसे जाँचें ? इस सब का क्या परिणाम है हमारे शरीर के स्वास्थ के लिए, व मानव समुदायोँ के और धरती माता के मांगल्य के लिए।

इन प्रश्नोँ के उत्तर स्पष्ट नहीं होते हैं, खासकर वैश्वीकरण व बाज़ारी उदारीकरण के सन्दर्भ में, जब औद्योगिक कृषि का विस्तार हुआ है और आहार हमारे पास परिवर्तन व विक्रय की प्रक्रियाओं से गुज़रते हुए प्रस्तुत होता है। हमारे जीवन में व समकालीन दुनिया में जो आहार रूपी जटिल अंतरसम्बन्ध हैं उन्हें हम ‘आहार-कड़िओं’ (food chains) के ज़रिये जांचेंगे। इसमे हमारा उद्देश्य रहेगा औद्योगिक आहार-कड़ियोँ की मौलिक समझ बनाना, जिसके लिए दृष्टिगोचर करेंगे कम्पनी-प्रधान कृषि व भोजन ‘निर्माण’ के उद्योगोँ को, खनिज-ऊर्जा पोषित कृषि को, विषैले ‘खाद्य’ रसायनों को, प्रकृति के हनन व जीवनशैली जनित रोगोँ को। औद्योगिक आहार-कड़ियाँ कैसे कार्यरत हैं ? इसमें किसका लाभ व किसकी हानि ? इससे हम कैसे प्रभावित होते हैं ?

हम भेद जांचेंगे औद्योगिक आहार-कड़िओं में व वैकल्पिक सुस्थिर आहार-कड़िओं में। रसैनिक व जैविक आहार में भेद क्या है ? ‘पैकेज्ड’ व ताज़े आहार में ? ज़्यादा स्वस्थ व स्थानीय आहार-कड़िओं में हम कैसे भागीदार हो सकते हैं ? जिनकी ऊर्जा व सृजनशीलता से आहार की निर्मिती होती है (जैसे कि कृषक, धरती माता आदि ) उनके प्रति हम क्या आभार अनुभव कर सकते हैं ? छोटे स्तर के खाद्य उत्पादन व कृषक के न्यायसंगत आर्थिक लाभ बाबत व्यवस्था को हम कैसे बल प्रदान कर सकते हैं ? स्थानीयकरण के किन तौर तरीकोँ में हम भागिदार हो सकते हैं ? हम कैसे सुनिश्चित कर सकते हैं कि हमारा मल-मूत्र वापस मिटटी को पोषित करने मे लगे ?

एक तरीका जिससे हम सब और ज़िम्मेदारी पूर्वक खा सकते हैं और वैकल्पिक आहार-कड़िओं को योगदान दे सकते हैं, वह है स्वयं के लिए, व अपने बच्चोँ व समुदायोँ के लिए पोषक व श्रेष्ठ भोजन के पकाने द्वारा। इस लिए भोजन सामग्री को सही स्रोतोँ से पाना, उसे तैयार करना व भोजन पकाना इस कार्यशाला की एक मुख्या गतिविधि होगी। पकाने की विभिन्न विधियां (जैसे भापसेपकाना, जमाना, सेकना, उबालना, तलना आदि ) समझाई जायेंगी व उपयोग मे लई जायेंगी। इसी प्रकार विभिन्न ईंधनोें (जैसे गैस, सौर्य, लकड़ी आदि ) का उपयोग भी हम सीखेंगे। भूले बिसरे देसी अनाजोें से परिचय बनायेंगे – उनका विगत में किस प्रकार उपयोग होता था, और अभी इन ‘मोटे अनाजोें’ की भारत में क्या स्थिति है। सीखेंगे कि बच्चों के लिए रुचिकर व स्वास्थवर्धक उपहार घर पर ही कैसे पकाये जा सकते हैं , व चीनी, मैदा, सफ़ेद चावल, रिफाइंड तेल आदि के विकल्प क्या हैं और दैनंदिन बने बिस्कुट व ब्रेड के क्या। लेकिन हम इस पर भी चिंतन करेंगे कि किस तरह पकाना केवल आहार को शरीर के पोषण हेतु सज्जीकृत करना मात्र नहीं है – उसमे सम्मिश्रित है भोजन पकाने वाले की दृष्टि, व दूसरोँ के साथ भोजन पकाने, खाने व उसका आनंद उठाने की सामाजिक प्रक्रिया।

स्वादिष्ट व स्वास्थवर्धक भोजन पकाने (व खाने !) के अतिरिक्त कार्यशाला की गतिविधियों में सम्मिलित रहेंगी चर्चाएं, प्रस्तुतियाँ, आत्म परिपेक्ष्य, लघु पठन, फ़िल्में, शोध, विधियोें आदि का आदान प्रदान व बागवानी, खाद-निर्माण …

 

यह कार्यशाला उन सब के लिए युक्त है जो भोजन करते हैं, व जानने में रूचि रखते हैं कि वे कैसे और ज़िम्मेदारी पूर्वक भोजन करें।

 

संचालक :

सुमी चंद्रेश व पति चंद्रेश (मानवजी ) के बच्चे कुदरत व अजन्म्य स्कूल के बाहर ही शिक्षा गृहण करते आये हैं। सुमी एक सृजनात्मक व्यक्ति हैं जो सीखते रहने, बच्चोँ के सान्निध्य में रहने, व कूड़े-कबाड़ से नयी चीज़ें बनाने में विशवास रखती हैं। इनकी जैविक बागवानी में भी रूचि है और वे काफी प्रयोगधर्मी हैं। भोजन पकाना उन्हें बहुत प्रिया है। वे पिछले 19 वर्षोँ से खोजती सीखती आयी हैं, और आनंदपूर्वक जीती हैं।

करुणा मोरारजी अपने पति विनीश गुप्ता व पुत्र नमन के साथ उत्तर पश्चिम कर्णाटक के एक गाँव मे रहती हैं। इनकी रूचि है ग्रामीण जीवन में, आहार सम्बंधित तौर तरीकोँ से प्रयोग में, जैविक बागवानी में, सादी सुस्थिर जीवनशैली में, व नयी चीज़ें सीखते रहने मे नमन के साथ जो भी सुखपूर्वक स्कूल की दीवारोँ के बाहर ही स्वशिक्षण में लगा है। करुणा ने इस प्रकार की कार्यशाला का संचालन पहले एक बार भी किया है, और तब उन्होँने पाया कि इसमें वे अपने वैकल्पिक शिक्षण, समाज शास्त्रीय सिद्धांतोँ, व आहार में रुचिओं को एक स्थान पर सम्मिलित कर पाती हैं।

सुमी व करुणा के अतिरिक्त कुछ अन्य विशेषज्ञ भी कुछ सत्रों में सम्बोधन / संचालन करेंगे।

भाषा:

यह कार्यशाला हिंदी व अंग्रेजी दोनोँ में होगी; प्रतिभागियों का दोनो भाषाओं से परिचय होना आवश्यक है ।

प्रतिभागिता शुल्क:

रु.4000 , पांच दिन की कार्यशाला के लिए, जिसमे भोजन व आवास, व कार्यशाला में उपयोग होने वाली सारी सामग्री शामिल है. आवश्यकता अनुसार, कुछ सीमित छात्रवृत्तियां उपलब्ध रहेंगी।
